welcome to waldorf

Everybody can eat like a millionaire, even if you live in a trailer! This salad was invented in the kitchen of the famous Waldorf Astoria Hotel in New York, around 1893. With minimum effort you can recreate a fresh Waldorf salad for yourself. Enjoy the food of a millionaire – without worrying about your table manners.

How to:

  • Cover 50 grams raisins with boiling water. After 10-15 minutes drain in a colander and set aside.
  • Thinly slice 3 celery sticks. Peel ½ celeriac and cut into small rectangular chips. In a large pot bring water to a boil and cook celeriac chips 3 minutes. Drain celeriac and set aside.
  • Peel 1 Granny Smith apple and dice. Sprinkle with some lemon juice to prevent from browning. Coarsely chop 85 grams walnut halves. Mix all ingredients in a salad bowl.
  • Mix 2 tablespoons mayonnaise, 3 tablespoons yogurt, 1 tablespoon liquid cream, 1 teaspoon wholegrain mustard and 1 tablespoon fresh lemon juice. Season to taste with salt and pepper. Pour dressing over the salad. Gently mix and serve.
