Get your kitchen tools out and cut some broccoli! Easy to cook, stir-fry or steam. Keep it ‘al dente’ like the Italians call it, which means you need your teeth to chew on it. Adding a few grains of sea salt and a bit of extra virgin olive makes broccoli irresistible.
When you combine steamed broccoli with cooked tomatoes (fresh or canned) they boost each other’s nutritional value. So combine red and green for great taste, lovely looks and a synergistic nutrient boost.
True: 3 to 4 ounces of broccoli contain as much calcium as one glass of milk. And the calcium in broccoli is also better absorbed.
WHAT MAKES BROCCOLI SPECIAL?
Since broccoli doesn’t grow a label, here are some nutritional highlights: it’s high in anti-oxidants and calcium. Broccoli also has a ‘secret’ ingredient, called sulforaphane, which kills germs and fights cancer.
